The ingredients needed to make Prawn Pulao:

  1. Provide of Basmati rice, soaked in water for 30 minutes.
  2. You need of gms. prawns, deveined & cleaned.
  3. Provide of potato, cubed.
  4. Take of oil.
  5. Use of ghee or as preferred.
  6. Prepare of bay leaves.
  7. Get of " cinnamon stick.
  8. Provide of green cardamoms.
  9. Provide of cloves.
  10. Get of star anise.
  11. Use of pathar ke phool.
  12. Provide of onion, sliced.
  13. Get of garlic, sliced.
  14. You need of ginger, sliced.
  15. You need of green chilies, slit.
  16. Take of milk.
  17. Prepare of water.
  18. Take of saffron.
  19. You need of salt.
  20. Use of turmeric powder.
  21. Take of garam masala powder.
  22. Use of fried onions.
  23. Get of coriander powder.
  24. Prepare of coriander-mint leaves.
  25. Get of cumin powder.
  26. Take of red chili powder.

Instructions to make Prawn Pulao:

  1. Soak the saffron in the milk and keep aside. Marinate the potatoes & prawns separately with a pinch of salt and turmeric powder for 10 minutes..
  2. Add the ghee to the pan and temper with cinnamon, cardamoms, cloves, bay leaves, star anise and pathar ke phool..
  3. Saute for a few seconds and then add the onions, garlic, ginger and green chilies. Fry on a medium flame till light brown..
  4. Now add all the dry spices (except salt) and saute well..
  5. Add the rice and continue to stir fry for 2 minutes..
  6. Then add the fried potatoes, fried prawns, saffron milk, water, fried onions, salt and chopped coriander-mint leaves. Pressure cook for 2 whistles. When it cools down a little, fluff it up with a fork..
  7. Serve with raita..
